This recipe is by Annabel Langbein and is on her new show “Simple Pleasures” .
4 large floury potatoes grated (with all the liquid squeezed out, using a clean tea towel), 1 tsp salt, 3 tbsp olive oil, parsley if you want.
Mix ingredients in a bowl and then divide into six portions and flatten down on a lined oven tray and bake at 190 degrees for 35 minutes. These were so easy and looked fantastic. You can just forget about them and get on with something else while they are cooking. T
They are fabulous as they are but next time I might add some crumbled feta and some coriander.
